Slow Cooker Artichoke Spinach Chicken Pasta

Equipment

  • 1 Slow Cooker
  • measuring cups

Ingredients
  

  • 1.5 lbs chicken breast
  • 1 can 14 ounces artichoke hearts, drained and chopped
  • 1 bag fresh spinach
  • ½ cup of cottage cheese full fat
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 teaspoon onion powder

Instructions
 

Place the chicken in the crockpot and the spinach in a mixing bowl.

  • Place the chicken breast in the bottom of a crockpot & put your spinach in a bowl

Add the dairy to the spinach

  • Add the parmesan, Greek yogurt, and blended cottage cheese to the spinach.
  • Mix the ingredients together

Add the artichokes

  • Add the artichokes to the bowl and mix until incorporated
  • Mix the ingredients until incorporated

Cook

  • Add the spinach mix to the chicken in the crockpot. Cook on low for 4-6 hours. 30 minutes before eating shred the chicken and add half a block of cream cheese and mix until melted.

Enjoy!

  • Enjoy the spinach artichoke mixture over pasta, as a dip, on bread, or over rice.

Notes

To store, place in the refrigerator for 4 days
