Slow Cooker Artichoke Spinach Chicken Pasta

As a busy mama, I’m always on the lookout for meals that check all the right boxes delicious, nourishing, and easy to throw together. That’s why I love this Slow Cooker Artichoke Chicken Pasta. It’s creamy, packed with protein and veggies, and best of all, the slow cooker does most of the work for you.  

If you’re someone who wants to feed your family wholesome, from-scratch meals without spending hours in the kitchen, this recipe is for you. The combination of tender chicken, nutrient-dense spinach, and creamy sauce makes it feel indulgent, but it’s made with real, nourishing ingredients.  

But the best part? It even won over my artichoke-hating husband.

Let me set the scene. My husband is not a fan of artichokes. If I even mention them, he wrinkles his nose. But I was determined to make this dish because, let’s be honest, I love artichokes, and I knew the creamy, cheesy sauce would make them irresistible.  

I just served it up, watching carefully as he took his first bite. Then another. And another.  Before I knew it, his plate was clean, and he looked at me & then had seconds! That’s when I knew this recipe was a keeper. Even the most skeptical eaters in your house will fall in love with it.

  • Slow Cooker
  • Measuring cups and spoons

Ingredients in Slow Cooker Artichoke Spinach Chicken Pasta

  • 1.5 lbs chicken breast
  • 1 can 14 ounces artichoke hearts, drained and chopped
  • 1 bag fresh spinach
  • ½ cup of cottage cheese full fat
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 teaspoon onion powder

Instructions

Place the chicken in the crockpot and the spinach in a mixing bowl.

Place the chicken breast in the bottom of a crockpot & put your spinach in a bowl

Add the dairy to the spinach

Add the parmesan, Greek yogurt, and blended cottage cheese to the spinach.

Mix the ingredients together

Mix the ingredients until incorporated

Add the artichokes

Add the artichokes to the bowl and mix until incorporated

Cook

Add the spinach mix to the chicken in the crockpot. Cook on low for 4-6 hours. 30 minutes before eating shred the chicken and add half a block of cream cheese and mix until melted.

Enjoy!

Enjoy the spinach artichoke mixture over pasta, as a dip, on bread, or over rice.

  • 1 Slow Cooker

Ingredients

To store, place in the refrigerator for 4 days
