Fresh Milled Flour Sourdough Waffles

Equipment

  • 2 Mixing Bowls
  • 1 Whisk
  • 1 Wooden Spoon
  • 1 Kitchen Scale

Ingredients
  

  • 150 g sourdough starter discard or fed & bubbly
  • 2 eggs
  • 180 g milk or buttermilk or a mix of both
  • 50 g butter melted
  • 100 g soft white fresh-milled flour
  • 50 g fresh-milled kamut
  • 50 g maple syrup
  • 12 g 2 teaspoon baking powder
  • 5 g ½ teaspoon salt
  • Mix-ins of choice: Strawberries chocolate, seeds, etc.

Instructions
 

Mix the dry ingredients

  • In a bowl, whisk together the fresh-milled flours, baking powder, and salt. Set aside.

Mix the wet ingredients

  • In a separate bowl, combine the sourdough starter, eggs, and milk/buttermilk. Stir until well blended.

Add the butter

  • Pour in the melted butter, making sure it has cooled slightly so it doesn’t cook the eggs.

Combine wet and dry Ingredients

  • Add the dry ingredients to the wet ingredients and mix until just combined. (Overmixing can make the waffles tough!)

Fold in mix-ins

  • If using, gently fold in berries, chocolate, or seeds. Or, sprinkle them onto each waffle individually for a customized experience!

Cook the waffles

  • Heat your waffle maker, lightly grease if needed, and pour in enough batter to cover the center. Close and cook until your machine beeps (or check with a thermometer—190-200°F is perfect).
