Ingredients in Fresh Milled Flour Sourdough Waffles

  • 150g sourdough starter (discard or fed & bubbly) – Adds a slight tangy depth of flavor, enhances digestibility, and contributes to a tender texture. Even discard helps with structure and nutrition!
  • 2 eggs – Provide structure, richness, and moisture while helping bind the ingredients together.
  • 180g milk or buttermilk (or a mix of both) – Milk adds creaminess, while buttermilk enhances tenderness and gives a slight tang, reacting with the baking powder for a fluffier texture.
  • 50g butter, melted – Brings richness and a buttery flavor while helping create a soft, moist texture.
  • 100g soft white fresh-milled flour – A nutrient-dense, finely milled wheat flour that keeps the texture light while adding a mild, slightly sweet flavor.
  • 50g fresh-milled kamut – Adds a subtle nutty, buttery flavor and boosts nutrition with extra protein, fiber, and minerals.
  • 50g maple syrup – A natural sweetener that adds warmth and depth without refined sugar while keeping the batter moist.
  • 12g (2 tsp) baking powder – Provides the necessary lift for a light and fluffy texture.
  • 5g (½ tsp) salt – Balances the sweetness and enhances the overall flavor.
  • Mix-ins of choice (strawberries, chocolate, seeds, etc.) – Customizable for added texture, flavor, and nutrition—fresh fruit for bursts of sweetness, chocolate for indulgence, or seeds for crunch and extra nutrients.

Mix the dry ingredients

In a bowl, whisk together the fresh-milled flours, baking powder, and salt. Set aside.

In a separate bowl, combine the sourdough starter, eggs, and milk/buttermilk. Stir until well blended.

Add the butter

Pour in the melted butter, making sure it has cooled slightly so it doesn’t cook the eggs.

Add the dry ingredients to the wet ingredients and mix until just combined. (Overmixing can make the waffles tough!)

Fold in mix-ins

If using, gently fold in berries, chocolate, or seeds. Or, sprinkle them onto each waffle individually for a customized experience!

Cook the waffles

Heat your waffle maker, lightly grease if needed, and pour in enough batter to cover the center. Close and cook until your machine beeps (or check with a thermometer—190-200°F is perfect).
