Homemade Cookie Dough Granola

Equipment

  • 2 Mixing Bowls
  • 1 Wooden Spoon or Spatula
  • Parchment Paper
  • 1 Baking Sheet
  • 1 Storage Container

Ingredients
  

  • 3 cups rolled oats Organic, can be fresh flaked groats
  • ¼ cup oat flour you can just put rolled oats in the food processor, no need to buy oat flour
  • cup maple syrup
  • 2 tbs cashew butter
  • cup coconut oil
  • 1 teaspoon vanilla
  • ¼ teaspoon sea salt
  • ¼ teaspoon baking soda
  • cup chocolate chips

Instructions
 

  • Preheat your oven to 325°F and line a baking sheet with parchment paper.
  • In a bowl, mix together the rolled oats, oat flour, cinnamon, sea salt, and baking soda
  • In another bowl, whisk together the **maple syrup, vanilla, and cashew butter. Add the melted coconut oil last to prevent it from solidifying.
  • Pour the wet ingredients over the dry and stir until everything is fully incorporated.
  • Spread the mixture evenly onto your prepared baking sheet and bake for 30-35 minutes, or until golden brown.
  • Let the granola cool for about **5 minutes**, then sprinkle in the chocolate chips while it’s still slightly warm (but not hot).
  • Store your cookie dough granola in an airtight container—it will stay fresh for up to a week!

Notes

You can sub the cashew butter for another favorite nut butter, but cashew butter gives it a more cookie like flavor
Feel free to add in other mix ins at the end!
