I’ve made my fair share of cornbread recipes, but fresh milled flour cornbread is hands-down my favorite. It’s slightly sweet, rich with buttery flavor, and has just the right balance between a tender crumb and a bit of that golden crust. Plus, it’s made with fresh milled flour, which means we’re getting all the goodness of whole grains—fiber, vitamins, and essential nutrients—without the overly processed, stripped-down flours found in store-bought mixes.  

Whether you’re serving it alongside a cozy bowl of soup, layering it with butter and honey, or pairing it with a hearty plate of barbecue, this fresh milled flour cornbread is sure to become a staple in your kitchen.

Ingredients in Fresh Milled Flour Cornbread

  • Fresh Milled Flour (Sofy White and Kamut) – Freshly milled wheat adds depth of flavor and nutrition. I love using soft white wheat for a lighter texture and Kamut for extra flavor.
  • Popcorn for fresh milled corn flour – Gives cornbread its signature texture and a rich, slightly sweet corn flavor.
  • Baking Powder – Provides the lift that makes the cornbread fluffy instead of dense.  
  • Salt - Enhances all the flavors and balances out the sweetness.  
  • Butter – Adds richness and moisture. Using real butter ensures the best flavor—no substitutes!  
  • Honey – A natural sweetener that keeps the cornbread just slightly sweet without being overpowering.  
  • Eggs & Egg Yolk– Help bind everything together and add tenderness.  
  • Buttermilk– Keeps the cornbread moist and soft. Buttermilk adds a slight tang and makes for an even more tender crumb.

Instructions

Preheat the oven and prepare the cast iron & mill your flour

Preheat your oven to 400°F and generously grease a 9x9-inch cast iron skillet. Place the cast iron in the oven to pre-heat as well.

Mix the dry ingredients

Whisk together the fresh milled flour, cornmeal, baking powder, and salt in a large bowl.    

Mix the wet ingredients

In a separate bowl, mix the melted butter, honey, and eggs until smooth.

Mix the wet and dry ingredients and add the buttermilk

Combine wet and dry ingredients and add the buttermilk. Stir until just mixed. Don’t overmix—this keeps the cornbread tender!

Pour & bake

Pour into your cast iron and bake for 20-25 minutes, until golden brown and a toothpick inserted in the center comes out clean.  

 

Cool, Slice, & Enjoy!

Let cool for 15 minutes and then remove from the cast iron. Slice and serve warm with butter, honey, or your favorite toppings.

Ingredients
  

  • 128 grams Fresh milled corn
  • 100 grams of soft white
  • 92 grams of kamut
  • ½ cup honey
  • 1.5 cups buttermilk
  • 2 teaspoon vanilla
  • ½ teaspoon salt
  • 4 teaspoon baking powder
  • 1 egg + 1 egg yolk
  • ¼ cup olive oil

Instructions
 

Preheat your oven and cast iron

  • Preheat your oven to 400°F and grease a 9x9-inch cast iron and place into the oven while it preheats.

Mill your flour

  • Mill your wheat berries

Whisk the dry ingredients

  • Whisk together the fresh milled flour, cornmeal, baking powder, and salt in a large bowl.

Combine the wet ingredients

  • In a separate bowl, mix the melted butter, honey, and eggs

Add the milk and combine the wet and dry ingredients

  • Combine wet and dry ingredients and the buttermilk and stir until just mixed. Don’t overmix—this keeps the cornbread tender!

Bake

  • Pour into your well greased cast iron and bake for 20-25 minutes, until golden brown and a toothpick inserted in the center comes out clean.

Cool and Enjoy

  • Let cool for 15 minutes and then remove from the cast iron. Slice and serve warm with butter, honey, or your favorite toppings.*

Notes

Storage: Place in an airtight container at room temperature for 2 days. I recommend cutting and freezing within a day of making these. They thaw great in the microwave.

    I’m not seeing the amount for the cornmeal in the ingredients of the recipe… how many grams of that do you use? Recipe sounds super yummy though!!

    You do not say how much corn to grind. I have ground grain for decades but have gotten away from using it all the time in my ingredients. I'm glad I found you.
